Celebrate Valentine’s Day with Heart-Shaped Omelet Muffins

It’s February, and I know some of you may not agree, but I love the month of February! Whether it’s because spring is just around the corner or because I genuinely enjoy Valentine’s Day, I’ve always found joy in celebrating this time of year (cue the eyerolls, haha!).


I love to make Valentine’s Day a little extra special and take the opportunity to show appreciation for those we love. This year, I decided to whip up something fun—heart-shaped omelet muffins! They were a hit in our house, and I barely had time to snap a picture before they disappeared from the plate.


Heart-Shaped Omelet Muffins Recipe

If you’re looking for a fun and easy way to celebrate Valentine’s Day with your family, these omelet muffins are perfect! I ordered a heart-shaped silicone pan (you can find one online or at local stores this time of year) and made these delicious muffins. Even our daughter, who doesn’t care for eggs, enjoyed some banana muffins I baked on the side.


Ingredients:

  • 12 Eggs

  • ¼ Cup Milk

  • 1 ½ Cups Shredded Cheese

  • 1 Can Rotel (for a little kick without too much spice)

  • ½ Cup Bacon Pieces

  • Salt and Pepper to Taste


Directions:

  1. Preheat oven to 350°F.

  2. Spray your heart-shaped pan with nonstick spray.

  3. Mix all ingredients in a bowl until well combined.

  4. Pour the mixture into the heart-shaped cups.

  5. Bake for 17-20 minutes, or until a toothpick comes out clean.

  6. Enjoy your delicious heart-shaped omelet muffins!


These were such a hit with my family—they gave them two thumbs up!
