Thanksgiving Leftovers Chopped Challenge

After your big Thanksgiving get-together, what do you do with all that extra food? Unless you’re a terrific menu planner, chances are, you will have some leftovers. Most people welcome a few leftovers, but after you’ve fed your family the same Thanksgiving meal for 4 days (no judging here!), why not spice it up a bit?


In our family, we love doing the Chopped Challenge! For those unfamiliar with the Food Network show, “Chopped”, chefs use a basket of mystery ingredients to create a three-course meal. At the end of each course, a panel of judges “chops” one chef whose course fails to measure up.


This year, our Chopped Challenge is to use the Thanksgiving leftovers and eggs from our flock and combine them into a tasty new dish. We take turns on who competes and who gets to judge. The best dish wins the Chopped Challenge!


If you are not adventurous in the kitchen, that’s okay. I’ve attached a couple fun recipes below to use up the leftovers.

Customizable Bread Bowl Breakfast

I am also including one of my favorite egg bake recipes. It is delicious, easy and serves a houseful! I have a couple different recipes I use, but a family favorite by far is my Blueberry Egg Bake.


Annie's Blueberry Egg Bake

Ingredients:

  • 1 loaf whole grain bread, sliced (I use cinnamon bread)

  • 4 eggs

  • 3 T. sugar (or ¾ tsp. Stevia raw)

  • 1 tsp vanilla

  • 2 ¼ C milk

Lightly grease a 9x13" pan. Layer the bread slices into the pan. Combine eggs, sugar, vanilla and milk, and whisk until smooth. Pour egg mixture over the bread layer, turning slices to make sure they are well coated. Cover and chill for at least 8 hours or overnight.

Crumble:

  • ½ C whole wheat flour

  • ⅓ C packed brown sugar

  • 1 tsp. Cinnamon

  • ¼ C butter

  • 1-2 C fresh blueberries

Preheat oven to 375 degrees. Sprinkle the blueberries evenly over the soaked bread. Then, combine flour, brown sugar and cinnamon in a small bowl. Cut the butter into the dry mixture until little pea size clumps form. Layer the crumble mixture over the blueberries. Bake uncovered for about 40 minutes or until golden brown. Remove from oven and garnish with additional blueberries.


For a special treat, if you can find blueberry syrup in your grocery store, get it! I pour warm, blueberry syrup over before serving and it’s a hit!
