Here’s my idea: start by sitting down together and reading the classic Dr. Seuss book, Green Eggs and Ham. It’s a childhood favorite filled with rhymes, silliness, and a message about trying new things. Then, once the story is over, surprise your little ones with a real-life twist on the tale by whipping up your very own green eggs and ham for a Saint Patty’s Day-inspired meal!

How to Make Green Eggs and Ham
This recipe is super easy and adds a fun twist to your typical breakfast. Plus, it's a great way to sneak in some extra veggies if you use spinach!
Ingredients:
Eggs
Spinach or blue food coloring
Salt
Pepper
Cheese
Ham
Directions:
Blend the eggs with spinach or a drop of blue food coloring. I prefer spinach because it’s a sneaky way to get some veggies into their diet! But if you don’t have spinach, just 1 drop of blue food coloring will do the trick. Why blue? Because yellow + blue = green! Clever, right? Haha!
Fry the eggs as you normally would.
Fry the ham alongside your eggs. I used cubed ham to keep it simple, but you can use any type of ham you like.
Add salt, pepper, and a sprinkle of cheese if your kids love it, and enjoy your fun, green meal!
