Easy Irish Tacos Recipe: A Fun Twist for St. Patrick’s Day

You guys are going to want to get your grocery lists out! I’m serious. I just made some incredible Irish tacos and you’re going to want to make them too! I was testing the recipe (or my spin of a recipe anyway!) for St. Patrick’s Day. I’m not even Irish but thought it would be fun to try something new.


I ended up eating two tacos for lunch! They were delicious. And now I’m going to make them for supper tonight too. If you wanted something fun and different for St. Patty’s Day for your family, this is it.


And the bonus part? Any leftovers can go right out to your chickens! However, I doubt there will be any leftovers.


Why This Recipe is Perfect?

My favorite recipes are ones that are minimal ingredients, few steps and so tasty! I’m not one to do multiple step recipes, so if you’re like me, this meal is for you!


Easy Irish Tacos Recipe

Prep Time: 10 Minutes Cook Time: 10 Minutes


Ingredients:

  • 3 Packages Corned Beef

  • 1 Bag Coleslaw Cabbage Mix

  • Sriracha Mayo (store-bought or homemade)

  • Fresh Cilantro

  • Small Tortilla Shells (I used low-carb tortillas)

  • Salt and Pepper to Taste

  • 1-2 Limes

  • Optional: Pico de Gallo (I didn’t use it, but feel free to add!)


Directions:

  1. Prepare the Cabbage Slaw: In a bowl, mix the coleslaw cabbage mix with sriracha mayo to taste. Add salt and pepper as needed.

  2. Warm the Tortillas: Lightly brown the small tortillas on both sides to warm them up.

  3. Cook the Corned Beef: Slice the corned beef and lightly brown in a pan.

  4. Assemble the Tacos: Layer the corned beef on the tortillas, followed by the cabbage slaw. Top with fresh cilantro, Pico de Gallo (optional), and a squeeze of fresh lime.

  5. Serve and Enjoy: Dig in and enjoy your delicious Irish Tacos!
