Chicken Hotdish: The Ultimate Comfort Food

It’s March, and we’re getting so close to spring I can almost feel it! March is extra special for our family because of all the birthdays. My husband, youngest son and my Gramma Lou all celebrate their birthdays this month. And Gramma’s birthday is extra fun because it’s on St. Patrick’s Day!


This year, we’re celebrating her 92nd birthday, and I thought it’d be the perfect time to share one of her most famous recipes—her chicken noodle hotdish!


The Story Behind Gramma Lou's Chicken Hotdish

She has told me for years how “easy” her chicken noodle hotdish is, but until recently I didn’t understand how easy it truly was! She walked me through making it one day, so I could bring it home to my family. Everyone loves it in our home and there are rarely any leftovers! Maybe the secret is my adorable chicken casserole dish, but more than likely, it’s years of love handed down through family recipes.

Hotdish or Casserole: What Do You Call It?

First, we should probably settle a very large debate that is constantly going on in our country. Are you ready? Do you say “hotdish” or “casserole”? We are hotdish people up here in Minnesota! I had no idea what a casserole was until I was quite a bit older! Haha!


Whatever you call it, you will call this particular dish incredible! It’s the ultimate comfort food!

Gramma Lou’s Famous Chicken Hotdish Recipe

If you’re looking for a healthy dish this week, you might want to keep scrolling. Haha! But if you want something easy, cheesy, and guaranteed to be a hit, this recipe is perfect. It’s easy to make, comforting, and packed with flavor.


Ingredients:

  • 2 cups cooked chicken, shredded into small pieces

  • 2 cups uncooked Amish egg noodles

  • 2 cups cream of chicken soup

  • 2 cups milk

  • ½ cup chopped onion

  • Salt and pepper, to taste

  • 3 Tbsp butter

  • 1 cup shredded cheese (your choice)


Directions:

  1. Preheat your oven to 350°F.

  2. Spray your casserole dish with nonstick spray.

  3. Layer the chicken on the bottom of the dish.

  4. Place the uncooked noodles over the chicken.

  5. In a saucepan, combine the milk and cream of chicken soup and heat until smooth. Pour the mixture over the noodles.

  6. Sprinkle the chopped onions over the soup and milk mixture. Add salt and pepper to taste.

  7. Sprinkle the top with butter and cover everything with shredded cheese.

  8. Bake for 30-40 minutes or until the top is bubbly and golden.

  9. Serve and enjoy!


A Family Tradition

Gramma Lou’s chicken hotdish has become a staple in our family. There are rarely any leftovers, and it’s a recipe I’ll pass down to my kids, just as Gramma passed it down to me. I asked Gramma if I could share her recipe, and she was thrilled! She loves that her cooking traditions are being carried on, and she’s especially fond of my chickens.
