Fall is in the air, and while I’ve been holding on to the last days of summer, it’s time to face the reality of sending the kids back to school. The lazy summer mornings, big breakfasts and spontaneous adventures are giving way to schedules, packed lunches and soccer and football games. But these are the years we’ll cherish as we raise our kids, and we’re embracing them!


This fall is especially exciting for us—we have a son getting married, a daughter starting her senior year and their younger brother not far behind. With all their activities, I’m always focused on having food healthy options available, and we all know how important protein is at any age!


These vegetable egg roll-ups are quick and easy to make, and you can customize them to suit your family’s tastes. They’re not only delicious but also a nutritious way to start the day. Plus, if your coop is anything like mine right now, you’ve got plenty of eggs to work with!

 

Easy Vegetable Egg Roll Ups Recipes


Ingredients:

  • 4 Eggs

  • Bacon or sausage

  • Shredded Cheese

  • Salt and Pepper

 

Vegetables of your choice:

  • Mushrooms

  • Spinach

  • Tomatoes

  • Peppers

  • Frozen veggies

 

Directions:

  1. Heat the Pan: Preheat a frying pan over medium heat and lightly grease it.

  2. Scramble the Eggs: In a bowl, scramble your eggs and season with salt and pepper to taste.

  3. Cook the Eggs: Pour the scrambled eggs into the heated pan. If you’re using a larger pan for bigger rolls, consider adding an extra egg or two.

  4. Add Veggies and Cheese: After the eggs have cooked for about 1-2 minutes, sprinkle in your choice of veggies and shredded cheese.

  5. Cover and Cook: Cover the pan and let the eggs cook for another 1-2 minutes, or until they’re almost fully cooked.

  6. Flip and Finish Cooking: Carefully flip the eggs for the last 30 seconds to finish cooking.

  7. Roll the Eggs: Remove the eggs from the pan and carefully roll them up (be cautious—they're hot!). Use toothpicks to secure the rolls if needed, but it’s optional.

  8. Garnish and Serve: Garnish with extra cheese, herbs or additional veggies. Serve with your favorite dipping sauce, like spicy mayo, or enjoy them plain.
