While we Minnesotans love a thick, hearty stew, sometimes you just want something light, warm and comforting. That’s where Egg Drop Soup comes in!
I’ll admit, this soup used to intimidate me a little—something about pouring the eggs in just right made me hesitate. But guess what? It’s so easy! If you’re looking for a quick, no-fail Egg Drop Soup recipe, I’ve got two great options for you.
No-Fail Egg Drop Soup Recipe
For an authentic, restaurant-quality egg drop soup, I love this version from The Woks of Life. It’s flavorful, comforting and incredibly easy to make at home!
Ingredients
4 cups chicken stock (organic or homemade preferred)
½ teaspoon sesame oil
¾ teaspoon salt
⅛ teaspoon sugar
⅛ teaspoon white pepper
½ teaspoon turmeric (or 5 drops yellow food coloring for that classic restaurant look, optional!)
3 tablespoons cornstarch (mixed with ⅓ cup water)
3 eggs (lightly beaten)
1 scallion (chopped for garnish)
¼ teaspoon monosodium glutamate (MSG, adjust to taste)
Step-by-Step Instructions
1. Prepare the Broth
In a medium soup pot, bring the chicken stock to a simmer. Stir in sesame oil, salt, sugar, white pepper and MSG (if using). If you want that rich, golden color, add turmeric or a few drops of yellow food coloring. Taste the broth and adjust seasoning as needed.
2. Thicken the Soup
Mix the cornstarch slurry (cornstarch + water) thoroughly before adding it to the pot. Slowly drizzle it into the broth while continuously stirring to prevent clumping. If you prefer a thicker soup, add more cornstarch; for a thinner consistency, use less.
3. Add the Eggs for That Perfect Swirl
Now comes the fun part! Lightly beat the eggs before adding them to the soup. Stir the broth in a circular motion with a ladle and slowly drizzle in the eggs. The speed of stirring determines whether you get large egg ribbons or smaller, delicate swirls.
4. Serve & Enjoy!
Ladle the soup into bowls, top with chopped scallions and serve immediately.
