Back-to-School Meal Prep: Easy Frozen Breakfasts for Busy Mornings

Where did summer go? For some of you, school is already in session, but our kids don’t start until September this year. We love summer in our family, so this time of year is always bittersweet. I’m that mom who always cries on the first day of school. Anyone else?


Even though I have mixed feelings about summer ending, I’ve found that being organized helps me handle it a little better. I’m a terrible meal planner during the summer, but I usually do a decent job when school starts. With three kids in different activities, having meals prepped gives me so much peace!


Easy Frozen Breakfasts in 40 Minutes

This morning, I whipped up 15 frozen breakfasts in about 40 minutes and popped them in the freezer! Both the breakfast burritos and egg cups were simple, quick and a great way to use the abundance of eggs from our hens. Below are the recipes if you’d like to try them!


Keep It Real: Every Family Is Different

Before we dive into the recipes, I want to add a small disclaimer: I’m not a professional chef or photographer. I’m just a regular wife and mom, doing my best for our family. Some days it’s easy, but other days, I crumble just like everyone else.


Your best for your family will likely not look like someone else’s—and that’s okay! Just make a plan that works for you and be thankful for the family God has given you. As Gretchen Rubin said, “The days are long, but the years are short.” So true!

Easy Egg Cup Recipe

These egg cups are a quick and nutritious breakfast option you can grab straight from the freezer!


Ingredients:

  • 12 eggs

  • Breakfast sausage (I used fully cooked turkey sausage crumbles)

  • Bacon Pieces

  • Shredded Cheese of your choice

  • Any veggies you’d like to add (peppers, onion, spinach, tomato)

Directions:

  1. Preheat oven to 350°F.

  2. Blend eggs well and pour into a greased muffin pan, filling each cup about halfway.

  3. Sprinkle sausage, bacon, and veggies into each cup.

  4. Top with shredded cheese.

  5. Bake for 10-12 minutes and enjoy!


Freezer Tip: Place 2 cups into small freezer bags for an easy grab-and-go breakfast.



Frozen Breakfast Burritos

These breakfast burritos are perfect for busy school mornings and can be easily reheated from frozen.


Ingredients:

  • 12-18 Eggs

  • 8 soft shell wraps

  • Breakfast sausage (I used fully cooked turkey sausage crumbles)

  • Bacon Pieces

  • Shredded Cheese of your choice

  • Veggies of your choice

  • Hot sauce if desired

  • Salt/pepper to taste

Directions:

  1. Scramble eggs and cook over medium heat in a frying pan.

  2. Add pre-cooked sausage, bacon and veggies to the eggs.

  3. When eggs are almost cooked, stir in shredded cheese and hot sauce.

  4. Fill each tortilla with about ⅓ cup of the egg mixture and roll them up.


Freezer Tip: Wrap each burrito in a paper towel, then in foil and place them in a freezer bag. This helps prevent freezer burn!


Reheating Instructions:

  • Remove from freezer bag and foil.

  • Microwave for 2-3 minutes and let sit for 1 minute before enjoying.

  • If thawed overnight in the fridge, reduce microwave time to 2 minutes.

Making Family Time Count
