It’s almost that time of year when we can taste summer! School is winding down, the weather is heating up and backyard BBQs are right around the corner.


As an egg lover (which is a good thing considering I have 40 laying hens!), I love bringing egg-themed dishes to summer gatherings. Whether it’s deviled eggs, egg salad, or even an egg bake, eggs are always a crowd-pleaser.


Today, I’m sharing a quick and easy appetizer—avocado egg salad! It’s not only delicious but also adds a fresh, summery twist to any BBQ spread.


Easy Avocado Egg Salad Appetizer Recipe


Ingredients:

  • 12 boiled eggs

  • ½-⅔ cup avocado mayo

  • 1-2 avocados

  • 1 tsp mustard

  • 2 green onions, chopped

  • Salt and pepper to taste

  • Chives (for garnish)

  • Small loaf of bread (like sourdough)


Directions:

  1. Dice the eggs, green onion and avocado.

  2. In a bowl, combine the avocado mayo, mustard, salt and pepper with the diced ingredients. Mix well.

  3. Spread the egg salad on small slices of bread and garnish with chives.

  4. That’s it—Boom! Your appetizer is ready. Simple, delicious and perfect for any backyard party!


Helpful Tip: Boil Eggs in an Air Fryer

Did you know you can use your air fryer to boil eggs? I set mine to 265°F for 17-18 minutes and they come out perfect every time. Simplifying things is the way to go around here! For bread, I found a small loaf of sourdough at my local grocery store—perfect for this easy appetizer.
